Sweet Potato Chili Skillet

Ingredients:

  • 1 lb lean ground beef

  • 1 tbsp avocado oil

  • 1 red bell pepper, finely diced

  • 1/2 small red onion, finely diced

  • 3 cloves garlic, minced

  • 1, 15 oz can crushed fire-roasted tomatoes

  • 1 medium sweet potato, peeled & cut into 1 in cubes

  • 1 can kidney beans, drained & rinsed

  • 1 cup of corn (canned) 

  • 1 tbsp tomato paste

  • 1 1/2 cups beef stock

  • 8oz block sharp cheddar cheese, freshly shredded

    Seasoning:

  •  2 tsp cumin

  • 1 tsp smoked paprika

  • 2 tbsp chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 2 tsp salt

  • 1 tsp pepper

Instructions:

  1. Preheat a large oven-safe sauté pan over medium heat. Add the avocado oil, red onion, and bell pepper. Sauté for 3-4 minutes, stirring occasionally, until softened. Add the garlic and cook for another minute.

  2. In a small bowl, combine all the seasonings and set aside.

  3. Add the ground beef to the pan along with half of the seasoning mixture. Cook for 7-10 minutes, breaking it apart with a spatula, until browned and fully cooked.

  4. Stir in the corn, beans, crushed tomatoes, tomato paste, and beef stock. Mix until the tomato paste is fully incorporated. Add the sweet potatoes and the remaining seasoning, then stir well.

  5. Bring to a simmer, cover with a lid, and reduce the heat to low. Simmer for 10-13 minutes, or until the sweet potatoes are tender.

  6. Remove the lid and sprinkle the shredded cheese evenly over the top. Transfer the pan to the oven and broil for 2-3 minutes, until the cheese is melted and beginning to crisp.

  7. Add your favorite toppings and enjoy!
