Street Corn Dip

what you’ll need:

  • 4 cups corn (fresh, frozen, or canned)

  • 1/2 cup plain Greek yogurt

  • 1 tbsp mayo

  • 1/3 cup sour cream

  • 1/2 cup crumbled cotija cheese

  • 1 tsp honey

  • 2 jalapeños, finely diced

  • 1/4 cup chopped cilantro

  • Juice of 1 lime

  • 1/2 tsp chili powder

  • 1/4 tsp smoked paprika

  • 1/2 tsp garlic powder

  • Salt and pepper

    to taste

  • 1 tbsp water to thin

Instructions:

  1. If using frozen corn, defrost according to package instructions.

  2. Mix all prepped ingredients into a large bowl, then top with extra cilantro & cojita cheese. 

    Optional: add a few dashes of hot sauce or Tajin on top before serving!
