Watermelon Feta Salad

what you’ll need:

  • 1 mini watermelon, cubed

  • 3 small Persian cucumbers, cubed

  • 1 handful of fresh mint, finely chopped

  • 6 oz crumbled feta (use as much or as little as you want)

  • Juice of 1 lime

  • Salt to taste

Instructions:

  1. Cut the watermelon and cucumbers into cubes and finely chop the fresh mint.

  2. Add the watermelon, cucumbers, mint, crumbled feta, the juice of one lime, and a generous pinch of salt to a large bowl.

  3. Gently mix everything together and taste. Add more salt or lime juice as needed.

  4. Serve immediately or store in the fridge until you’re ready to enjoy!
