Caprese Sticks with Homemade Blueberry Balsamic Glaze

what you’ll need:

  • 8oz mozzarella pearls

  • 12 oz sugar bombs tomatoes

  • Fresh basil

  • 1 cup frozen blueberries

  • 1/2 cup balsamic vinegar

  • 1–2 tsp honey

  • Pinch of salt

Instructions:

  1. Add the blueberries and balsamic vinegar to a small saucepan over medium heat.

  2. Bring to a low boil, then reduce heat and let it simmer for about 10–15 minutes, stirring occasionally, until the mixture thickens slightly.

  3. Use a fork or the back of a spoon to mash the blueberries a bit while it simmers.

  4. Once thickened, add the honey and salt. Mix well, then remove from the heat and let it cool.

  5. Meanwhile, prepare the skewers by adding one tomato, a mozzarella ball, & basil to each stick. Add to a serving platter and set aside.

  6. Once the blueberry glaze has set, pour it through a mesh sieve to remove all the large chunks, letting all the glaze through to a bowl below. 

  7. Drizzle over the caprese sticks and serve immediately!
