Marinated Mojito Lime Chicken Caesar Salad

what you’ll need:

Chicken Marinade

  • 4 boneless, skinless chicken breasts or thighs

  • 1/4 cup fresh lime juice

  • 1/4 cup fresh mint leaves, chopped

  • 2 tbs fresh cilantro, chopped

  • 2 tbs olive oil

  • 2 cloves garlic, minced

  • 1 tsp honey

  • Salt and pepper, to taste

Salad ingredients

  • Shredded romaine lettuce

  • Caesar salad croutons

  • Grated parmesan cheese

  • Caesar dressing of choice

Instructions:

  1. In a medium-sized bowl, add in all of the chicken marinade ingredients and mix well. Then, add the chicken breasts to a ziplock bag and pour the marinade over them. Mix everything around in the bag and place it in the fridge to marinate for at least 1 hour. I usually make it the night before and let it sit overnight.

  2. Once it’s done marinating, preheat your pan to medium-high heat. Pour out the chicken along with the marinade ingredients. Cook chicken about 6-8 minutes per side until fully cooked. The cook time will vary based on the thickness of the chicken. Once it’s done, let it rest for a couple of minutes, then slice into bite-sized pieces.

  3. Now it’s time to assemble the salad! In a bowl, place the romaine lettuce, mojito lime chicken, croutons, parmesan cheese, and your Caesar dressing of choice! Some of my other favorite toppings to add to this salad are grape tomatoes and some sliced red onion. Enjoy!
