Loaded Cheeseburger Potato Bowls

what you’ll need:

For the potatoes:

  • 2 yukon gold potatoes, cubed  

  • Sprinkle of salt, pepper, and paprika 

  • 1 tbsp of avocado oil

    For the ground beef:

  • 1 lb ground beef 

  • 1 tbsp Burger seasoning

    For the bowls:

  • Shredded cheddar cheese 

  • Dill pickles, diced  

  • Shredded lettuce

For the burger sauce: 

  • ⅓ cup mayo

  • ¼ cup ketchup 

  • 2 tbsp sweet relish 

  • 1 tbsp dill pickle juice 

  • ¼ tsp garlic powder

Instructions:

  1. Preheat the oven to 425 degrees. Add the cubed potatoes to a large baking sheet, drizzle with oil, sprinkle with seasonings, and toss until evenly coated. Bake for 25 to 30 minutes, stirring halfway through, until golden and crispy.

  2. While the potatoes cook, heat a skillet over medium-high heat. Add the ground beef and cook for 7 to 10 minutes, breaking it up as it browns, until fully cooked. Sprinkle in the burger seasoning, stir to combine, then remove from the heat.

  3. To make the burger sauce, add all the sauce ingredients to a small bowl and stir until everything is well incorporated. 

  4. To assemble, layer roasted potatoes in the bottom of each bowl, then top with ground beef, shredded cheese, diced pickles, shredded lettuce, and a generous drizzle of burger sauce. Enjoy!
