Italian Baked Meatballs

what you’ll need:

  • 1 1/2 lbs ground turkey 

  • 1/2 cup Italian pork rind breadcrumbs (or regular breadcrumbs)  

  • 1/2 medium onion, chopped 

  • 1/2 cup grated parmesan cheese

  • 1 tbsp minced garlic 

  • 2 large eggs 

  • 1/2 tbsp Italian seasoning

  • 1 tsp salt 

  • 1/2 tsp pepper 

  • 1 24 oz jar of your favorite pasta sauce

  • 8 oz shredded mozzarella cheese

  • Served over spaghetti squash or your favorite pasta

Instructions:

  1. Preheat the oven to 400 degrees

  2. In a large bowl add the ground turkey, breadcrumbs, parmesan cheese, eggs, minced garlic, and seasonings. Mix until everything is well incorporated.

  3. Spoon out a heaping scoop of the meat mixture, roll it into a ball, then place in a greased baking dish. Repeat the process until you’ve rolled all the meat mixture into meatballs.

  4. Pour your pasta sauce of choice over the meatballs making sure they are all well covered. Then top with an even layer of mozzarella cheese.

  5. Bake in the oven for 25-30 minutes, until the ground turkey is fully cooked.

  6. Once ready scoop out a few meatballs and extra sauce and place it on top of some spaghetti squash or your favorite pasta! Enjoy!
