Firecracker Ground Beef Bowls

what you’ll need:

  • 1 lb lean ground beef

  • 1 tbsp avocado oil

  • 5 mini red bell peppers, sliced into thin rings

    For the sauce:

  • 1/3 cup low-sodium soy sauce

  • 3 tbsp brown sugar

  • 3 tbsp sriracha

  • 1 tbsp rice vinegar

  • 1/2 cup beef broth

  • 2 tsp fresh ginger paste

  • 1 tsp chili flakes (adjust for heat)

  • 2 tsp cornstarch

    for serving:

  • Cooked broccoli 

  • Choice of cooked rice 

  • Sesame seeds 

  • Sliced green onions

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a spatula. Cook 6-8 minutes until browned. Add the sliced bell peppers and saute for a couple more minutes. 

  2. In a small bowl, whisk soy sauce, beef broth, brown sugar, sriracha, rice vinegar, garlic, ginger, and corn starch. 

  3. Pour the sauce over the cooked beef and peppers, then stir. Let it simmer 2-3 minutes until thickened. 

  4. Now it’s time to assemble!Add your choice of veggie and rice to the bowl and top with sesame seeds and freshly sliced green onion. Enjoy!
