Crockpot Tomato Basil Chicken Pasta

what you’ll need:

  • 2 lbs Chicken breasts

  • 1 (28 oz) can fire roasted crushed tomatoes

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated parmesan cheese

  • 1/4 cup sun-dried tomatoes, chopped

  • 1/4 cup fresh basil, chopped

  • 1 tbsp minced garlic

  • 1 tbsp italian seasoning

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

  • Cooked pasta of your choice (I used brown rice pasta)

  • Topped with freshly chopped basil and grated parmesan cheese

Instructions:

  1. Place the chicken breasts in the bottom of the crockpot.

  2. In a mixing bowl, combine crushed tomatoes, chicken broth, heavy cream, parmesan cheese, sun-dried tomatoes, fresh basil, minced garlic, italian seasoning, salt, and pepper. Mix well.

  3. Pour the tomato-cream mixture over the chicken in the crockpot and make sure it’s well coated.

  4. Cook on high for about 2 1/2 hours or until the chicken is fully cooked.

  5. 30 minutes before it’s done, use two forks to shred the chicken in the crockpot.

  6. Cook your favorite pasta according to the package instructions then pour into the crockpot and give everything a good mix.

  7. Serve immediately with some freshly chopped basil and parmesan cheese. Enjoy!
