Creamy Sausage & Gnocchi Soup

what you’ll need:

  • 1 lb hot Italian chicken sausage

  • 1 small yellow onion

  • 1 tbsp minced garlic

  • 2 red peppers

  • 3 tablespoons tomato paste

  • 4 cups chicken broth 

  • 12 oz gnocchi

  • 1-2 cups spinach

  • 1/2 cup organic half and half 

  • 1 teaspoon Italian seasoning

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tbsp avocado oil

  • Fresh grated Parmesan cheese on top

Instructions:

  1. In a large pot add in 1 tbsp of oil on medium high heat. Add in the italian sausage and cook for 5-7 minutes until fully cooked. 

  2. Meanwhile chop up the onion and bell peppers. Once chopped, add them to the pot along with 1 tbsp minced garlic, italian seasoning, salt, pepper, and tomato paste. Mix well and saute for 5 minutes until the veggies begin to soften. 

  3. Add the chicken stock and bring to a boil. Add the gnocchi and cook for another 2-3 minutes until the gnocchi floats to the top. Make sure to stir every couple of minutes so the gnocchi doesn’t stick to the bottom. 

  4. Remove from the heat and add in 1/2 cup of half and half and chopped spinach. Stir until the spinach has wilted. To each bowl add some freshly grated parmesan cheese and enjoy!
