Chocolate Strawberry Jam Cups

what you’ll need:
For the chocolate mixture:
1 cup dark chocolate chips (I used unsweetened)
1 tbsp coconut oil
For the filling:
Strawberry jam
5-6 large strawberries, finely chopped
Instructions:
In a small bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
Grease a mini muffin tin or line it with mini cupcake liners. Spoon a thin layer of melted chocolate into the bottom of each cup.
Add a small spoonful of finely diced fresh strawberries to each, then top with about 1 teaspoon of strawberry jam.
Gently press the strawberry and jam filling down slightly to create an even layer.
Pour the remaining melted chocolate over each cup, making sure the filling is completely covered on the top and around the sides.
Place the tin in the freezer for at least 2 hours, or until fully set.
Once frozen, transfer the cups to an airtight container and store them in the freezer. Enjoy straight from the freezer or let sit for a few minutes to soften slightly before eating.
