Balsamic Chicken Caprese Salad

Today I made my viral balsamic chicken into a delicious caprese salad! This salad is so refreshing and is the perfect summer night dinner!

what you’ll need:

Chicken Marinade

  • 1 lb Chicken breast or thighs

  • 1/2 cup balsamic vinegar

  • 2 tbs olive oil

  • 2 tsp italian seasoning

  • 2 tsp dijon mustard

  • 1 tsp garlic powder

  • Pinch of salt & pepper

In the Salad

  • Mixed greens

  • Sliced grape tomatoes

  • Mozzarella balls

  • Sliced green onion

  • Balsamic glaze

Instructions:

First things first is to marinate the chicken. In a bowl mix together the balsamic vinegar, olive oil, mustard, italian seasoning, garlic powder, salt, and pepper. Then add the chicken to a bowl, tupperware, or zip lock bag and pour the marinade over the chicken. Mix well so that the chicken is fully coated. Place in the fridge for at least 30 minutes to marinate.

Once the chicken has been marinated it’s time to cook! Preheat the pan to medium high heat and add the chicken as well as the marinade. Cook for about 7 minutes perside until the chicken is fully cooked. The marinade should evaporate and the chicken will get a nice char.

While the chicken is cooking slice up your grape tomatoes, mozzarella cheese balls, green onion, and avocado. Once the chicken is finished it’s time to assemble! To a bowl add in some mixed greens, the balsamic chicken, and all your prepped toppings. Finish it off with a drizzle of balsamic glaze and enjoy!

Note* If you’d like, you can use a balsamic vinaigrette dressing if you don’t have balsamic glaze.
